MARCOS: Marco’s Pizza founder Pasquale “Pat” Giammarco moved to the U.S. from Italy when he was nine years old and grew up working in his family’s pizzeria. He later embarked on a mission to make high quality pizza on a larger scale using a secret sauce recipe that he developed and refined with his father.
Giammarco focused on three key areas: dough, sauce and cheese. He established three standards in order to deliver the consistent levels of quality and freshness expected of Marco’s products: dough made fresh daily in each store; a proprietary sauce recipe that blends imported spices and three types of vine-ripened tomatoes; and an exclusive blend of three fresh cheeses (never frozen, unlike many pizza chains).

   It’s a good thing I don’t live near this pizzeria or I would be getting a White Cheezy pizza way too often. I’m a big fan of white pizza from Freshetta’s brick oven pizza to BC’s with the Ranch Dressing sauce.
   But this is something else: garlicy buttery sauce sprinkled with 4 cheeses, including feta, bacon onions and sliced baby tomatoes layed on top. The crust is buttery and a bit stiffer than than New York Style pizza and has a nice cornmeal crunch. This would also be grea cubed up and served as appetizers at a party.
   I’ve heard some great reviews on their salads also.

   Marcos has the best pizza around. I have had pizza in Chicago a few times and nothing beats Marcos. The White Cheezy Pizza is the best and they have great salads and subs too. Very good deal for your money.
